It’s only a week until shrove Tuesday, so it’s time to get practicing your best kitchen Pancake Olympics! Try this tasty, super healthy recipe out for some delicious, gluten free, pancakes that are high in protein and low in sat fat; they’re the perfect way to kick start your day and keep you full until lunch time.
I’ve included the nutritional info below, however I wanted to stress how much I hate calorie counting. What’s so great about these pancakes is that they pack in 30g of protein giving you a great energy boost to tackle the day ahead and also make a really effective workout mini-meal. The fat content is rich in healthy, fatty acids thanks to the Flax Seed powder, which also gives you a nice fibre boost to keep your digestion regular. Bananas are high in slow-release carbohydrates, as well as being one of your 5 a day!
INGREDIENTS: makes 2 pancakes
1 x banana
2 x medium eggs
2 x scoop of Protein World™ Slender Blend
2 x tsp of Protein World™ Flaxseed Powder
dash of milk or dairy-free alternative
1. Mush up your banana (this is a great use for those too-ripe ones looking a bit sorry for themselves at the bottom of the bowl) and crack in the eggs, then add the Slender Blend™ and Flaxseed Powder, and a dash of milk if the mixture needs loosening. Alternatively, whack it all in a blender!
2. Heat a tsp of coconut oil in a flat pan, add the mixture and cook. I found that it took a little longer to cook through than a standard pancake, and went quite a lot darker; don’t worry, it’s not burning, just give it a little shake then practice your flipping skills…
This is where you can have fun and throw whatever you fancy on top; it would taste great sweet or savoury!
I mixed a teaspoon of Protein World™ Acai Berry Powder into 4 teaspoons of yogurt and put that on top with a handful of blueberries and a teaspoon of Protein World™ Chia Seeds.
